Chilli Chicken Asian Style

I made this yesterday and it was sooooo gooooddddd!!

  • 3 Boned chicken breast
  • ½ cup Cashew nuts or peanut, fried
  • 20 g Dried red chilies
  • Frying oil
  • 1 tbsp Szechuan red pepper corns (didnt have it so didnt use it)
  • 1 stalk Spring onion
Marinade:
  • 1 Egg
  • 3 tbsp Corn starch
  • 1 tsp Salt
Sauce:
  • 1 tbsp Dark soya sauce
  • ½ tsp Jiafan rice wine (didnt have it so didnt use it)
  • ¼ tsp Mined garlic (used powdered garlic)
  • ½ tsp Sesame oil (didnt have it so didnt use it)
  • ¼ tsp Sugar
  • ½ tsp Rice vinegar (didnt have it so didnt use it)
  • ½ tsp Salt
  • 1 cup Cornstarchy solution (1 cup water, chicken bullion, 2 tbsp corn start)

  1. Cut the chicken into 1" cubes. Mix with marinade for 30 minutes.
  2. In a small bowl, place all the ingredients for the sauce and mix well.
  3. Heat some oil in wok to 205C/400F. Add chicken and fry 30 seconds. Remove chicken and drain off all but 1 tablespoon oil.
  4. Heat oil and fry chiles until fragrant. Add pepper corn and spring onion, stirring and tossing together. Pour this on top of the fried chicken.
  5. Add sauce mixture to wok and cook, stirring with whisk, just until thickened. Remove from heat, pour on chicken and then sprinkle with nuts.

Fried Duck Asian Style

made this yesterday with a whole duck and was a hit!

ingredients:
1 duck (4 pounds),disjointed
2 tablespoons flour
2 tablespoons cornstarch
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons oil
2 cups thinly sliced scallions
1 tablespoon minced ginger root
2 minced garlic cloves
4 tablespoons soy sauce
4 tablespoons sherry (i used red wine, but sherry should be better)
1/2 cup chicken broth or water

How to:
Remove as much fat as possible from the duck.
Roll in a mixture of the flour, cornstarch, salt, and pepper.
Heat the oil in a deep skillet; brown the duck in it.
Pour off the fat.
Add the scallions, ginger, and garlic; cookfor 2 minutes, stirring frequently.
Add the soy sauce, sherry, Ac'cent, broth or water.
Cover and cook over low heat 1 hour or until duck is tender and all the liquid is absorbed.

Dinner Rolls

1 pkg. or 2-1/4 teaspoons yeast
1 c. warm water
1 pkg. Sweet & Low
2 tbsp. veggie oil
1 egg
2 1/2 - 2 3/4 c. flour
1/2 tsp. salt
Soft butter

(1 US cup = 2.4 decilitres)

Dissolve yeast in water. Add sugar, oil and egg. Stir to dissolve all. Add 1 cup of flour, stir until smooth. Cover and let set for 15 minutes, covered. Then stir well and add 1 1/2 cups flour. Stir until mixed and put on flour covered board and knead for 3 minutes. Divide dough into 16 pieces and roll into a ball for rolls. Put into greased pan, brush with butter and let rise for 25 minutes.

Bake in 425°F oven for 15 minutes.

Chicken Soup by Tanya

Shred the chicken into tiny tiny pieces and let them simmer in two cans of coconut milk.

When the chicken turns white, add:
- Tumeric
- Santa Maria Tandoori mix (yes haha, I was out of my own homemade curry mix)
...- Salt (I used hawaiian salt and red salt)
- Black pepper
- Diced garlic (tiny tiny dice)
- Diced red bell pepper (also really tiny dice)
- Haricot verts
- Butter

And let it simmer until you feel like it's done :)

Tanya: I usually make it when I feel like I'm getting a cold or something along those lines. It's supposed to have anti-inflammatory effects (the chicken and the tumeric especially). Perhaps the garlic too.

The plan is to make it tonight :D!

Potato Avocado Salad

this was yesterday and it was absolutely delish.

cut all of them up into salad likes pieces and mix. dressing is balsamic vinegar and extra virgin olive oil and salt and pepper. must be made really soon! upload photo then.

Beef Stroganoff

my love affair with beef stroganoff began at kline commons, and it continues till today.

serves 4, you can also make it with veal.

i love it with lots of tabasco ;)

Ingredients

  • 1 pound beef chuck roast
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 ounces butter
  • 2 green onions, sliced (white parts only)
  • 2 tablespoons all-purpose flour
  • 1 (10.5 ounce) can condensed beef broth
  • 1/2 teaspoon prepared mustard
  • 1 (6 ounce) can sliced mushrooms, drained
  • 2 tablespoons and 2 teaspoons sour cream
  • 2 tablespoons and 2 teaspoons white wine
  • salt to taste
  • ground black pepper to taste

Directions

  1. Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long. Season with 1/2 teaspoon of both salt and pepper.
  2. In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef strips.
  3. Stir the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.
  4. Five minutes before serving, stir in the mushrooms, sour cream, and white wine. Heat briefly then salt and pepper to taste.

5 minute chocolate mug cake

4 tablespoons flour

4 tablespoons sugar

2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (Microwave Safe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly before pouring in the milk and oil in. Keep mixing. Add the optional chocolate chips next (who makes that an option!) and vanilla extract, and mix again…

Put your mug in the micro wave and cook for three minutes at 1000 watts. The cake will rise over the top of the mug, but don’t be alarmed! Allow it to cool a little, and tip out onto a plate if desired.

EAT ! (this can serve two if you want to feel slightly more virtuous). (serve with vanilla ice cream maybe?)

Why is this the most dangerous cake recipe in the world? Because we are all only 5 minutes away from warm, gooey, delicious chocolate cake any time, night or day.

Crispy Buffalo Wings!

I am a wing person and made these yesterday. They get as crispy as the deep fried ones but you can make them in a regular kitchen oven. They were a huge hit :)!

This recipe makes 20 wings - collected from:http://allrecipes.com//Recipe/baked-buffalo-wings/Detail.aspx . You can alter the serving portions here for exact measurements which is very helpful.

Ingredients
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 20 chicken wings
  • 1/2 cup melted butter
  • 1/2 cup hot pepper sauce (such as Frank's RedHot®)

Directions

  1. Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. (Note: Before you flour the wings, make sure they are very dry by pouring them all out in a washcloth and patting them dry.)Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.(Note: I didn't freeze them for an hour like is recommended because I did not have the time but I did use frozen wings - and so I guess the same effect was achieved.)
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Whisk together the melted butter and hot sauce (Note: I used store brand Buffalo Sauce) in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes (Note: It took me more like 30 minutes). Turn the wings over halfway during cooking so they cook evenly.

Naan!

I made it today and it was perfect! The rolling out is the tough part but it is easiest to make balls and them expand them ut with your fingers on your baking surface.

Serves: 6

Preparation time: more than 30 minutes
Ingredients
2 cups plain flour
¾ cup water, warm
2 tablespoons oil
2½ tablespoons Greek or natural yoghurt
1 teaspoon salt
1 teaspoon dry yeast, 3 teaspoon fresh yeast
1 teaspoon sugar
Pinch baking powder

Method
1.
Mix yeast with water in a bowl and set aside.
2.
Sift flour and add salt, sugar and baking powder and mix together.
3.
Add yoghurt and mix together, then add water with yeast and mix.
4.
Form into a dough, by kneading on a floured surface.
Place dough back into bowl and proof in a warm place, covered with a cloth, for 4 hours or
until dough rises well.
5.
Preheat oven to 230-240°C. Place 2 trays in oven to heat as well.
6.
Divide dough into 6 equal parts and roll into rectangles 6 mm thick.
7.
Before placing the dough into the oven wet fingertips with water and pat very lightly on the
dough.
8.
Line trays with baking paper before placing naan on top.
9.
Bake until golden spots appear and the dough is cooked.
10.
Spread hot bread with garlic butter or serve plain.
11.
Recipe notes
Naan bread is traditionally cooked on a hot stone plate inside the oven at a very high heat very
quickly, as most kitchens won't have a stone plate to cook on, the baking trays need to be very hot to
help cook the naan properly.


Red Currant Pie

They were picked from the garden, and the pie - more of a cake with red currant and meringue on top - turned out great. Better even with vanilla sauce.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 2 egg yolks
  • 1 1/2 teaspoons grated lemon zest
  • 2 egg whites
  • 1/2 cup white sugar
  • 2 teaspoons cornstarch
  • 2 1/4 cups red currants
Directions:
  1. To Make Dough: In a medium bowl, sift together flour and baking powder. Mix in butter, sugar, egg yolks and lemon zest until mixture forms dough. Let rest in cool place for 30 minutes.
  2. Preheat oven to 325 degrees F (165 degrees C). Roll out dough (note: very difficult to do so just put it in the pan and use your fingers to spread it all around evenly on the pan) and put into a springform pan.
  3. Bake in oven for 25 minutes, or until golden yellow.
  4. To Make Filling: In a medium bowl, beat egg whites until stiff. Gradually stir in sugar and cornstarch; beat for 5 minutes (note: the mixture was no longer like egg whites when stiff) . Fold currants into mixture and pour into pie crust.
  5. Bake in oven for 10 minutes (note: I actually had to bake for 30 minutes to get this to turn brown), or until top is lightly browned.

Swedish Apple Pie

Made many times - simple and yum!

Ingredients:
1 1/2 pounds Granny Smith apples - peeled, cored and sliced
1 tablespoon sugar
1 cup sugar
1 cup flour
1 teaspoon cinnamon
3/4 cup melted butter
1 egg

Directions:
Preheat oven to 350 degrees F (175 degrees C).

Toss apples with 1 tablespoon of sugar, and pour them into a pie plate. Thoroughly mix together 1 cup of sugar with the flour, cinnamon, butter, and egg. Spread this evenly over the top of the pie.

Bake in preheated oven until the apples have cooked and the topping is golden brown, about 40 to 45 minutes.

Chicken in Yogurt and Garam Masala Sauce

I have made this many times but this specific recipe is from Aneeqs.

Ingredients:
1 tbsp tomato paste
0.75 cup plain yogurt
1.5 tsp garam masala
0.5 tsp cumin seeds
1 tsp salt
1 tsp garlic powder
1 tsp ginger powder
1.5 tsp chili powder
1.5lb chicken breast
2 medium onions sliced
2 tbsp ghee
1 inch cinnamon
4 green cardamoms
cilantro

Cut chicken in strips and marinate with tomato paste, yogurt, garam masala powder, cumin seeds, garlic, ginger and chili powder. Heat oil and fry sliced onions to make them brown and crispy. Remove onions, cool and crush. Reheat the oil and and add back the crushed fried onions. Add chicken to the onion fried oil and stir fry for a few minutes. Stir until cooked. If needed add little water.

Separately take some ghee and add cinnamon and cardamom to the ghee. Julienne green chilies and chop cilantro. Add the ghee, cilantro and the chilies to the chicken. Cover and let sit for sometime to let the aroma blend in.

Cilantro Chicken Chili Eggrolls

Mince chicken, cilantro and chilis. Mix, add salt, black pepper, ginger, garlic, paprika, chili powders. Fry in oil until chicken is done. Put in eggroll sheets, wrap and fry. Serve whole or cut in a slant with sweet chili sauce.

Recept för blåbär cheesecake (från Dominique från Svenskurs)

Jag ska ladda upp bilden när jag baka det. Hoppas jag kan baka i sommar ;).

Ingredienser

300 g digestivekex
...150 g osaltat smör
100 grl strösocker
50 gr majsmjöl
2 tsk vaniljsocker
600 g Philadephia (naturel)
250 gr kesella 10% (kvarg)
3 st ägg
100 ml vispgrädde
200 g vit choklad
frysta blåbär eller färka

1. Sätt ugnen på 175 grader, varmluft. Smält smöret.
2. Krossa kexen i mixer eller i en plastic väska, och rör i det smälta smöret.
3. Packa blandningen hårt en form med löstagbar botten. Grädda botten i 5-10 minuter och låt den svalna.
4. Blanda socker, majsmjöl och vaniljsocker i en skål.
5. Rör kesella och färskost och vispa krämigt med en elvisp.
6. Häll i sockermix.
7. Höj temperaturen i ugnen till 200 grader. Tillsätt äggen och vispa väl. Häll i grädden lite i taget under vispning.
6. Smält chokladen i ett vattenbad eller i mikrovågsugn, och rör ner den i smeten.
7. Fyll smeten över kakbotten och strö över bären på toppen. Grädda kakan i 30 minuter. Man kan täcka den med aluminiumfolie när den fått gyllene färg för att den inte ska bli för bränd. Stäng av ugnen och låt kakan stå kvar i eftervärmen i 30 minuter.
8. Låt cheesecaken stå i kyl över natten eller 6-8 timmar för att den ska sätta sig och bli lättare att skiva upp i snygga bitar.

Moms Pudding when I was young.

This is one desert I remember mom making when I was young. She had no time, this was simple and we absolutely loved it. I collected the recipe a decade later from Aneeqa. Yet to try but when I do try it, I'll upload the photo.

You need: 3 eggs, one can condensed milk, one can evaporated milk, some sugar and a round dish.

Mix 3 eggs, one can condensed milk, one can evaporated milk
Blend very well... preferably with mixer.

Make caramel by melting sugar and pouring into round dish
or making it on the round dish.

When this cools, pour in the egg mix.

Bake in water bath 350F for 40mins.

Cool in fridge.

Plop it onto a the serving plate.

dont get scared if caramel cracks :).
